Mustard-Crumbed Salmon

Ingredients

ROAST POTATOES

SWEET & SOUR CABBAGE

  • 4 cups (1 L) shredded red cabbage, sliced about ¼ inch (5 mm) thick
  • 2 oz (60 g) bacon, diced
  • ½ tsp (2 mL) caraway seeds
  • 2 tsp (10 mL) Cindy’s Garden olive oil
  • 1 tbsp (15 mL) white wine vinegar
  • 1 tbsp (15 mL) honey
  • Freshly ground pepper
  • 2 tbsp (30 mL) chopped chives

MUSTARD-CRUMBED SALMON

  • 1 tbsp (15 mL) mayonnaise
  • 2 tsp (10 mL) grainy Dijon mustard
  • ½ tsp (2 mL) Dijon mustard
  • 1 tbsp (15 mL) chopped dill
  • ½ tsp (2 mL) grated garlic
  • 1¼ lbs (625 g) salmon fillet
  • Salt and freshly ground black pepper
  • ¼ cup (60 mL) coarse fresh bread crumbs
  • 2 tsp (10 mL) Cindy’s Garden olive oil

Through the years, our expert winemakers have created award winning wines.  This Cabernet-Merlot is a full-bodied wine reflecting the structure and spiciness of the Cabernet softened with the silkiness and fruity character from the Merlot.  Like the herringbone bricklaying pattern on the label, the combination of these two varietals with some skilled oak ageing ‘interlock’ to make a better more concentrated and flavourful wine.
